Information on green foods include a class of substances called “thylakoids” which are in plant cells and appear to inhibit or slow down fat digestion and increase signals of satisfaction that go to the brain. Some researchers believe spinach is a good source for “thylakoids”. The book, The Green Food Bible, goes on to say that chewing watercress is a folk remedy for bleeding gums. Ironically, I had a better checkup at my dentist than I have ever had since being on green foods. Watercress has also been used historically as a breath freshener and palate cleanser.
