When I heard the Dave Sandoval, co-owner of Purium and author of The Green Food Bible, speak about “bitters,” I said to myself, “Ah ha – maybe this is part of why my food addictions stopped so easily.” I was curious, so I researched it more. As the book, The Green Food Bible states, if we looked at the Ayurvedic philosophy, if our bodies were “overloaded” with sweetness (sugar), it would make sense to counter that sweetness with bitterness, which can include bitter, dark, leafy greens. The book references The Ayurvedic Cookbook by Amanda Morningstar. It also shares that “light, pungent, and rich vitamins and minerals, dark leafy vegetables like kale, collards, watercress, beet greens, chard, arugula, dandelion, chicory, mustard and turnip greens are all described in Ayurvedic as specific healers for the liver and immune system.”
